HACCP spelled in full as "Hazard Analysis Critical Control Point" is the internationally recognized risk-based systematic preventative approach to food safety.

HACCP was originated in the 1960s by the Pillsbury Company in reply to NASA’s request for a preventative food safety system for astronauts. It includes a series of procedures for process control and sensitive points in the food chain, and it also addresses physical, chemical, and biological hazards as a means of prevention rather than finished product inspection.
